Fill the Gap

“Farmers and chefs around the world, unite!”

The invisible wall that divides the city and the countryside begins to tremble when chefs and farmers begin collaborating in the Fill the Gap -project due to start in the spring of 2014.

Two years ago the idea of an innovative collaborative project began to germinate in the mind of Sasu Laukkonen (head chef, Restaurant Chef & Sommelier, Helsinki) when he started thinking that chefs don’t really understand the work that farmers do. The dishes they create would not exist without the invaluable contributions of the farmers and the soil they grow in.

The chefs and the farmers have to be brought to the same table, but how?

Sasu Laukkonen asked for help from farmer/chef Janne Länsipuro, and with combining their contacts and knowhow the project was realized.

Together they want to help culinary and farming students understand each others’ work, share knowledge and develop new openings for taking culinary culture to the next level.

Partners in the project include Fiskars, Cook it Raw Community, City of Helsinki and Restaurant School Perho. Creative work and concepting by Måndag.

The concept will be published in the spring of 2014 so stay tuned.
